Momofuku's Ginger-Scallion Rice Noodles

Momofuku's ginger-scallion sauce is one of the signature sauce from chef David Chang. You will be surprise how easy to prepare this sauce and taste exceptional good. Prepare the sauce in 20 minutes ahead and then toss with your favorite noodles (I prefer Asian-type noodles). One more thing to note, no cooking needed to make this sauce. Just mix the minced ginger, chopped scallion, vinegar, light soy sauce, oil and salt will do. However I did give those ingredients a quick stir fry just to reduce the raw taste of ginger. I serve the noodles with pan fry Japanese tofu and oven-roasted cauliflower.
