Blueberries Coconut Muffins


Seems like blueberry and lemon are the ingredients that I use most frequent in my cooking history. I believe this will repeat till there are no more blueberries or lemons in this world. This time, I baked a blueberries coconut muffins with heavy cream. The muffin turn out to be light and fluffy, which will make you non stop putting this muffin into your mouth.

Nasi Lemak

I guess my craving for nasi lemak had make me lose control. Started from preparing the coconut milk & screw pine leave rice, onion sambal, pan-fry anchovies , roasting peanuts to hardboiled eggs. Even though I had spent few hours in the kitchen to prepare most of the ingredients from scratch, but the reward by seeing family members enjoying it is priceless :)

Momofuku's Ginger-Scallion Rice Noodles

Momofuku's ginger-scallion sauce is one of the signature sauce from chef David Chang. You will be surprise how easy to prepare this sauce and taste exceptional good. Prepare the sauce in 20 minutes ahead and then toss with your favorite noodles (I prefer Asian-type noodles). One more thing to note, no cooking needed to make this sauce. Just mix the minced ginger, chopped scallion, vinegar, light soy sauce, oil and salt will do. However I did give those ingredients a quick stir fry just to reduce the raw taste of ginger. I serve the noodles with pan fry Japanese tofu and oven-roasted cauliflower.

Jamie Oliver's Roast Chicken


This is Mother's Day dish #1 and I'm so happy that my whole family love it!
This chicken had been roasted for more then an hours but the meat still remain tender, juicy and full of flavor. Everyone just can't stop eating it! It's a delicious dish that require less work. Roast this chicken with celery, big onions, carrot, garlic, lemon and fresh herbs for 1 hour 30 minutes or till cooked.

Thai-style Steamed Fish


Beautiful and simple way of steaming fish! This was dish #2 for Mother's day celebration. I'm glad my mum likes it!
Mix the crushed garlic, green chilies, cilantro (also know as coriander or Chinese parsley) stems, lime juice, fish sauce, sugar and white pepper. Apply this paste on fish and steam on boiling water for 10-15 minutes. Garnish with lime and cilantro leaves.
